‘A dorso di buffalo’, illustrated magazine in the “Buffalo Bill” series. Printed in 1932 by Nerbini Publishing House in Florence. The legendary pioneer (born William Frederick Cody, 1846 – 1917) claimed to have exterminated more than 4000 bison during his military expeditions against the Native Americans and to protect the new railway.

Bison meat

Bison meat tastes like beef, but has a lower fat content and is an excellent source of protein. To combine the best characteristics of both animals and obtain lean, tasty beef, beefalo was developed, a hybrid of bison crossed with domestic cattle. About 35,000 buffaloes are slaughtered in the United States each year for their meat.
