Bison meat tastes like beef, but has a lower fat content and is an excellent source of protein. To combine the best characteristics of both animals and obtain lean, tasty beef, beefalo was developed, a hybrid of bison crossed with domestic cattle. About 35,000 buffaloes are slaughtered in the United States each year for their meat.
